You’ll want to make these for breakfast all fall long. The texture is so soft and tastes just like pumpkin bread. I will never go back to pancake mixes, homemade pancakes are just too good! You can also save leftover pancakes and freeze to have an easy breakfast on busy mornings!⁣

Easy blender pumpkin spice pancakes!

Ingredients

  • ¾ cup pumpkin puree⁣
  • 2 large eggs⁣
  • ⅔ cup oat milk (or any milk of choice)⁣
  • 2 teaspoons vanilla extract⁣
  • 1 tablespoon maple syrup⁣
  • 1 ½ cups old fashioned rolled oats⁣
  • 2 teaspoons baking powder⁣
  • 1 teaspoon pumpkin pie spice ⁣
  • 1/4 teaspoon salt⁣

Instructions

  1. Blend all ingredients until smooth, 1 minute.
  2. Cook pancakes on low-medium heat and scoop with 1/3 cup to get the perfect sized pancakes, 1-2 minutes each side. ⁣
  3. Serve with your favorite toppings and enjoy!
