20 minute Salmon Bowls

If you’re trying to get more fish into your diet, here’s a nutritious meal that’s fun to put together, gluten free, full of fiber and protein! Great for lunch or dinner and makes for a delicious meal prep for the week! I honestly eyeball all of the ingredients but here are the rough measurements.

Ingredients

Salmon marinade
  • Salmon marinade:
  • 1 lb salmon filet
  • 2 tbsp tamari for gf or soy sauce
  • 1 tsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp minced garlic
Toppings
  • Cook rice according to instructions (leftover or instant rice makes this meal even faster!), set aside.
  • Cut salmon into cubes and place in a bowl. Add in all marinade ingredients. Mix until salmon is coated, place in refrigerator.
  • While salmon is marinating, prepare your toppings. Slice cucumber, green onions, and avocado. Microwave edamame if frozen. Make spicy Mayo. Set aside.
  • Add 1 tbsp olive/avocado oil in a pan over medium heat. Add salmon cubes and let cook for 5-7 minutes. Flipping cubes gently with tongs or tossing with a spatula/spoon as they will flake apart once they get cooked through. Cover for 1-2 minutes if you want to ensure the salmon is cooked all the way.
  • Assemble your bowl! Enjoy!
