Air Fryer Coconut Shrimp

Here’s a crowd pleasing appetizer for you! Coconut shrimp is so easy to make, especially with an air fryer, which still allows you to get that crispy crunch! I’ve also paired it with a delicious sweet chili lime sauce. Perfect for game day! 🏈

Ingredients

Coconut Shrimp
  • 1 lb large shrimp (~30 shrimp) shelled & deveined
  • 1 cup all purpose flour
  • garlic powder
  • salt, pepper
  • paprika
  • 1 cup panko breadcrumbs
  • 1/2 cup unsweetened shredded coconut
  • 2-3 eggs
  • garnish: curly parsley
Sweet chili lime sauce
  • 1/4 cup sweet Thai chili sauce
  • 2 tbsp ketchup
  • 1 clove garlic, minced
  • zest from 1 lime
  • juice from 1/2 lime

Instructions

  1. in a large bowl/plate, combine flour with a generous sprinkle of the spices (measure with your heart).
  2. add panko crumbs to another bowl with shredded coconut.
  3. whisk eggs in a 3rd bowl.
  4. coat shrimp in flour, then dredge in eggs, and finally into the coconut panko mixture, gently pressing to ensure the entire shrimp is coated.
  5. place coconut shrimp in the air fryer in one layer (do not stack on top of each other) and spray with oil. cook at 370F for 6-7 minutes, flipping halfway through. you’ll need to do this for multiple rounds to get through all of your shrimp. while shrimp is cooking, mix together all sauce ingredients into a small bowl, set aside.
  6. once all shrimp are cooked, garnish with chopped parsley and lime. serve immediately with sweet chili sauce!

Notes

You can also use croutons in place of panko breadcrumbs. Blend in a blender or food processor until it reaches a finely ground texture similar to panko. Usually adds more flavor too, especially if they're garlic/herb croutons.
