Bibim Guksu (Korean Cold Spicy Noodles)

For all my foodies who love spice and noodles, this one’s for you: bibim guksu (spicy cold noodles). Super simple and made to be enjoyed on a hot day! ⁣

Bibim Guksu (Korean Cold Spicy Noodles)

Ingredients

  • 4 oz Somyeon (thin wheat noodles)⁣
  • 2 tbsp Gochujang ⁣(Korean chili paste)
  • 1 tsp rice vinegar⁣
  • 1 tsp sugar⁣
  • 1 tbsp toasted sesame oil ⁣
  • 1/2 cup kimchi, roughly chopped (preferably a little aged)⁣
  • 1/4 cup kimchi brine/juice or cold water⁣
  • Toppings: sliced cucumber, boiled egg, toasted sesame seeds⁣

Instructions

  1. Prep cucumber sticks and boiled eggs ⁣(you could make boiled eggs ahead of time)
  2. Combine kimchi, kimchi brine or water, gochujang, sesame oil, and vinegar in a large bowl⁣
  3. Boil noodles for 3-4 minutes until soft chewy texture, then drain and rinse with cold water until no longer hot⁣
  4. Add cold noodles to the kimchi mixture and mix until all the noodles are coated with sauce ⁣
  5. Plate noodles and garnish with cucumber, boiled egg and toasted sesame seeds. Optional to add a bed of greens. Serve and eat right away! ⁣
