Lemon Poppyseed Energy Bites

Ingredients

  • 10 pitted dates⁣
  • 1 cup cashews⁣
  • 1/2 cup shredded coconut⁣
  • 1 tbsp cashew butter⁣
  • Zest of 1 lemon⁣
  • Juice of 1/2 lemon⁣
  • 1/2 tsp cinnamon⁣
  • 1/8 tsp salt (omit if you’re using salted cashews)⁣
  • 2 tsp poppy seeds⁣
  • 1-2 tbsp water as needed ⁣

Instructions

  1. Add all ingredients minus poppyseeds and water in a food processor. Blend until a cohesive dough forms without big chunks. Adding water as needed if it’s too dry.
  2. Remove blade from food processor and sprinkle poppyseeds. Mix together with spatula until well combined. Scoop out dough and roll into small balls. Optional to roll them in extra shredded coconut!
  3. Store in fridge to firm and maximize shelf life! ⁣
