Banana Carrot Cake Loaf

banana bread 🤝 carrot cake. spring is the season for carrot cake so I thought it would be even better if I made it a hybrid with the classic banana bread. and ofc with cinnamon cream cheese frosting. you’re gonna love this 🫶🏼

Banana Carrot Cake Loaf

Ingredients

wet ingredients
  • 2 ripe and spotty bananas
  • 1/3 cup olive oil
  • 2 eggs (room temp)
  • 1 tsp vanilla extract
  • 1 cup shredded carrots
  • 1/3 cup sugar
dry ingredients
  • 2 cups AP flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
cinnamon cream cheese frosting
  • 4 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon

Instructions

  1. preheat oven to 350F. in separate bowls, add your wet and dry ingredients.
  2. add your wet ingredients to your dry ingredients and mix until just combined - DO NOT overmix
  3. pour into greased loaf pan (can line with parchment paper) and bake for 45-55 minutes (mine took 55 but depends on your oven).
  4. while loaf is cooking, make frosting by mixing all ingredients with electric mixer until smooth and creamy.
  5. when finished, remove loaf from oven and place on wire rack to cool. once cooled, spread cream cheese frosting over with an even layer. slice and enjoy!
