Spring Pesto Ravioli with Asparagus

Ingredients

  • 1 pack ravioli (any filling, bonus points if you can get fresh ravioli from the store)
  • pesto sauce
  • asparagus
  • optional: grated parmesan, red pepper flakes

Instructions

  1. chop asparagus into small segments, set aside
  2. boil water in medium pot then add ravioli (cook according to instructions depending on if you have fresh or regular ravioli). with 2 minutes left of cooking time, add in asparagus.
  3. strain ravioli and asparagus then add into a mixing bowl. add a few dollups of pesto and mix until all ravioli is coated.
  4. optional to garnish with freshly grated parmesan and red pepper flakes!
